The popularity of Espresso Martini’s has taken off over the past couple of years. Celebrate National Espresso Day on Nov. 23 this year with a twist. Using Costa Café (35% ABV),a tequila-based coffee liqueur, will elevate your favorite drink this fall.
Costa Tequila’s mixologist, award winning chef, and ambassador Chef Meredith Ouzounian is excited to share her recipe for a delicious tequila-based Costa Tequila’s Cafe Espresso Martini. It is the perfect addition for colder weather and family gatherings.
Ouzounian says she finds seasonality to be extremely important when picking out ingredients to pair together for cocktails. Costa Café, a tequila-based coffee liqueur that is made with Blue Weber Agave and Mexican coffee beans. The mild yet smooth offering features natural coffee flavors including caramel and vanilla that brings out the rich flavors of her Pumpkin Brown Butter Cake with Miso Glaze (recipe also below).

Ingredients:
1 oz Costa Café
2 oz Costa Reposado
1 oz Simple Syrup
1 shot of Espresso
Garnish with 3 Espresso Beans
Directions:
In a tall glass, add ice. Pour over Costa Cafe, Reposado, simple syrup and espresso. Shake and pour into a chilled martini glass. Garnish with 3 Espresso Beans. Enjoy!
Pumpkin Brown Butter Cake with Miso Glaze
Yields two 9-inch Loaves
Ingredients:
For the pumpkin loaf:
1 cup unsalted butter
3 large eggs
1 1/2 cups sugar
1/2 cup packed light brown sugar
2 cups puréed roasted pumpkin
3 cups all purpose flour
1 teaspoon salt
2 teaspoons baking powder
2 teaspoons baking soda
1/2 teaspoon freshly ground nutmeg
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
For the miso glaze:
5 tablespoons salted butter
1 1/2 cups confectioners sugar, plus more if needed
1 teaspoon vanilla extract
2 teaspoons white miso paste
1 tablespoon filtered water
Directions:
Preheat your oven to 350° F. Line with parchment paper and grease two 9-inch loaf pans.
In a large frying pan, heat the butter over medium high heat. It will melt first, and then start to foam. Turn the heat down to medium. Stir the melted butter almost constantly, scraping any browning bits from the bottom of the pan. When the butter has turned a brown color and smells rich and nutty, remove it from the heat. (This should take about 7 minutes). Allow it to cool for about 10 minutes.
In a large bowl, mix pumpkin puree, eggs, cooled brown butter, sugars, and vanilla. Add flour, salt, baking powder, baking soda, nutmeg, and cinnamon. Stir until completely mixed and most big lumps are broken down.
Transfer batter into prepared pans and bake for about 45 minutes, checking every so often to rotate and be sure the cake is evenly baking. To check to make sure cake is cooked through, stick a toothpick or skewer in the center and be sure it comes out clean with no batter stuck onto the stick.
Once the cake is completely baked, place on a baking rack and allow to cool. In the meantime, mix in a medium bowl all content for glaze. Be sure to whisk until all lumps are worked out.
Once the cake has completely cooled. Pour glaze over the top, serve and enjoy!
